Simple Refried Beans

What you need:
1 large can pinto beans
1 tbsp oil
1 tsp minced garlic
1 tsp cumin
1/2 tsp chili powder
lime juice (I use 1/2 frozen lime juice cube)

What you do:
1. Heat oil on low in skillet and add garlic.
2. Drain beans.
3. Add beans, seasonings and lime juice to skillet.
4. Smash beans and simmer on low stirring every once in a while.
5. Serve!

Easy Cheesy Broccoli Orzo

What you need:

1 cup orzo

2 cups sliced broccoli

1 can Cheddar cheese soup

1/2 tsp. Salt

1/4 tsp. Pepper

What you do:

1. Boil orzo in water for about 6 minutes.

2. Add brocolli to boiling water and boil an additional 4 minutes.

3. Drain.

4. Stir in soup, salt, and pepper.

5. Simmer a few minutes and serve!

Potato Wedges

What you need:

6 potatoes washed well

1/2 cup olive oil

1 tsp. parsley

1 tsp. cilantro

1/2 tsp. garlic powder

1 tsp. chicken bouillon

1/4 tsp. chili powder

salt

What you do:

1. Preheat oven at 400 and line a cookie sheet with foil.

2.  Mix all ingredients except potatoes and salt in a bowl and set aside.

3.  Slice potatoes lengthwise into wedges.

4.  Roll potato wedges in oil mixture.

5.   Put potatoes onto pan and bake for 30 minutes.

6.  Remove from heat, flip potatoes over, sprinkle with salt and return to oven.

7.  Bake an additional 20 minutes.

8.  Remove from heat, let drain and sprinkle generously with salt.

Cheesy broccoli rice

This is totally easy, especially if you own a rice cooker!

What you need:

1 cup long grain white rice

1 can cream of mushroom soup

3 cups frozen broccoli florets

2 cups water

1 tsp. garlic salt

1/2 cup cheese

What you do:

1.  Rinse rice.

2.  Add rice, soup, garlic salt and water to a rice cooker or large pot.

3.  Cover and cook on high.

4.  Add broccoli and cheese when rice has soaked up almost all of the water and let steam until rice has cooked through.

Sweet and Spicy Peanuts!

What you need:

2 cups unsalted peanuts

2 crushed cloves garlic

2 tsp. chili powder

1 tsp. cayenne pepper

1 tsp. sugar

vegetable oil

What you do:

1.  Add about 2 tsp. vegetable oil to a frying pan with garlic.

2.  Fry about one minute and stir in peanuts, chili powder and cayenne pepper.

3.  Fry a couple more minutes until peanuts are covered in spice mixture.

4.  Drain on paper towel and sprinkle with sugar.

Cilantro-Lime Rice

This is super easy!

What you need:

2 cups white basmati rice

1 bay leaf

4 cups water

1 tbsp. olive oil

small bunch of fresh cilantro (about 2 tablespoons)

juice of 1.5 limes

1.5 tsp. salt

What you do:

1.  Rinse rice in a strainer under water until water runs clear.

2.  Heat olive oil in a saucepan and stir in rice.

3.  Warm rice in skillet for a couple of minutes, while stirring until all rice is covered in a bit of oil.  This will prevent it from sticking.

4.  Transfer rice to a rice cooker and add 4 cups of water and bay leaf.  Cook.  If you do not have a rice cooker you can do this on the stovetop by putting rice, water and bay leaf in a large pot on the stovetop.  Bring to a rolling boil, reduce heat, cover and simmer about 7 minutes or until cooked through.

5.  When done remove bay leaf.

6.  Transfer rice to a large bowl and stir in salt, cilantro, and lime juice.

Serve!
