Simple Refried Beans

What you need:
1 large can pinto beans
1 tbsp oil
1 tsp minced garlic
1 tsp cumin
1/2 tsp chili powder
lime juice (I use 1/2 frozen lime juice cube)

What you do:
1. Heat oil on low in skillet and add garlic.
2. Drain beans.
3. Add beans, seasonings and lime juice to skillet.
4. Smash beans and simmer on low stirring every once in a while.
5. Serve!

Mashed Potato Bites

These are super naughty but fun to serve as a side to steak, chicken, or really whatever you want!

What you need:

1 cup water

3/4 cup flour

1 tsp chicken-tomato bouillon

5 potatoes

1 tsp. garlic powder

1 tsp. parsley

1 tsp. salt

1 tbsp. melted  butter

oil for frying

What you do:

1.  Boil potatoes until soft enough to mash.  Rinse with cold water and peel.

2.  Mash potatoes in a large bowl with garlic powder, parsley, salt, 1/4 c. flour and melted butter.

3.  In a separate dish mix 1 cup water, 1/2 cup flour and 1 tsp. chicken-tomato bouillon.  This is your batter.

4.  Heat oil in a skillet until ready for frying.

5.  Roll about 1 tbsp. at a time of potato mixture and form into circular shapes.

6.  Dip potato shapes into batter and toss into oil.

7.  Fry until golden, drain, and serve!

Juicy thin steak and vegetables!

What you need:

1 lb. thinly sliced bottom round steak

1/2 cup water

1/4 cup olive oil

1/2 cube chicken bouillon

1/2 tsp. cumin

1/2 tsp. coriander

1/8 tsp. garlic powder

1/2 tsp. Vegeta seasoning

1/2 tsp. beef bouillon powder

1 tablespoon fresh cilantro

1 cup frozen mixed vegetables

1/2 diced red onion

a dash of salt

1/2 diced serrano pepper

a half of pot of water for boiling meat

What you do:

1.  Boil meat in pot of water for about 30 minutes at a medium setting.  Drain.

2.  Cut beef into small pieces.

3.  Heat olive oil in a large skillet on low.

4.  Add meat, 1/4 cup water, and all seasonings.

5.  Simmer for about 10 minutes.

6.  Add vegetables to pan and continue to simmer about 10 minues.

7.  Serve with rice ( I prefer Somali rice, but you could really serve with whatever type you like).

Potato Wedges

What you need:

6 potatoes washed well

1/2 cup olive oil

1 tsp. parsley

1 tsp. cilantro

1/2 tsp. garlic powder

1 tsp. chicken bouillon

1/4 tsp. chili powder

salt

What you do:

1. Preheat oven at 400 and line a cookie sheet with foil.

2.  Mix all ingredients except potatoes and salt in a bowl and set aside.

3.  Slice potatoes lengthwise into wedges.

4.  Roll potato wedges in oil mixture.

5.   Put potatoes onto pan and bake for 30 minutes.

6.  Remove from heat, flip potatoes over, sprinkle with salt and return to oven.

7.  Bake an additional 20 minutes.

8.  Remove from heat, let drain and sprinkle generously with salt.
