Mexican Rice III

What you need:
3 tbsp. Vegetable oil
2 cups rice
4 cups water
1/2 yellow onion
2 tbsp. tomato bouillon
2 tsp. minced garlic

What you do:
1. Heat onion in oil for about 2 minutes.
2. Rinse rice till water runs clear.
3. Stir in rice with oil and onion until all rice is covered with oil.
4. Stir in seasonings.
5. Add water and bring to a boil.
6. Reduce heat, cover and simmer about 10 minutes.
7. Serve!

Chicken Fiesta Rice

image What you need:

1 boneless skinless chicken breast

1 cup rice

1 can black beans

1 can diced tomatoes with green chiles

2.5 tsp.chicken bouillon

2.5 cups water

1 tsp. minced garlic

1 tsp. minced onion

1 tbsp. cilantro

1 tsp. garlic powder

1/2 tsp.  cumin

shredded cheese

olive oil

What you do:

1. Add oil to pan and bring to medium heat.

2. Dice chicken and brown in pan with minced garlic and onion: drain.

3. Add 2 tbsp. olive oil to pan and pour in rice, cilantro, garlic powder, chicken bouillon and cumin.

4. Heat at low and stir until all rice is coated in oil.

5. Add tomatoes, black beans and water and bring to boil.

6. Stir continuously until most liquid is gone.

7. Cover and simmer on low for about 20 minutes.

8. Sprinkle with cheese.

9. Serve!

Stroganoff Rice

What you need:
1 lb. ground beef
1 cup fresh sliced mushrooms
1 tsp. salt
dash of minced onion
1 tbsp. beef bouillon
2 cups water
1.5 cups instant rice
1/2 cup sour cream

What you do:
1. Brown ground beef and drain.
2. Add mushrooms, water and all seasonings.
3. Bring to a boil.
4. Stir in rice, reduce heat, cover and simmer 5 minutes or till rice is cooked.
5. Remove from heat and stir in sour cream.

Cheesy Chicken and Broccoli Rice

What you need:
1 1/2 cups instant white rice
1 boneless skinless chicken breast
2 cups frozen broccoli
1 can cream of mushroom soup
1 1/4 cup water
1/2 cup shredded cheddar cheese
salt, pepper, parsley
1 tbsp. oil

What you do:
1. Slice chicken into cubes and season with salt, pepper and parsley.
2. Brown chicken in pan with oil.
3. Add soup and water to pan and bring to a boil.
4. Add rice and broccoli,cover and simmer on low for about 5 minutes.
5. Turn off heat, sprinkle with cheese and cover to let melt.

Mexican Rice II

What you need:

2 cups long grain rice

4 cups water

1/2 diced yellow onion

2 smashed cloves garlic

3 tbsp. oil

3 tbsp. chicken bouillon

1/4 cup tomato sauce

What you do:

1.  Rinse rice until water runs clear, set aside.

2.  Heat oil in a skillet on low and add onions and garlic.

3.  Simmer on low for about 2 minutes.

4.  Stir in rice and bouillon and make sure all rice is covered with oil, simmer about 2 minutes.

5.  Stir in tomato sauce

6.  Transfer rice to a large pot and stir in 4 cups water.

7.  Bring to a boil for about 7 minutes.

8.  Cover and set heat on low for about 10 minutes or until rice is cooked through.

9.  Serve!!!

Tomato-Black Bean Rice

What you need:

1 cup long grain rice

1/2 tsp. minced garlic

1/2 tsp. paprika

1/2 tsp. salt

1/2 tsp. parsley

2 cups chicken broth

1 can unsalted diced tomatoes

1/2 cup black beans

1/4 cup olive oil

What you do:

1.  Rinse rice until water runs clear.

2.  Heat olive oil on low on stovetop.

3.  Add rice and all seasonings.

4.  Simmer about 3 minutes, stirring to ensure all rice is covered in oil.

5.  Stir in tomatoes, chicken broth, and black beans.

6.  Transfer to rice cooker and cook ( if you do not have a rice cooker continue to steps 7 & 8).

7.  Transfer to large pot and heat to boiling, stirring so rice doesn’t stick to pan.

8.  Turn heat to low, cover and let simmer until rice is cooked through.

9.  Serve!!

Cuban Rice

This is a tasty low calorie version of Cuban inspired rice!!

What you need:

1 cup long grain rice

1/4 diced onion

2 crushed cloves garlic

1/2 tsp. paprika

1 tsp. salt

1/2 tsp. parsley

2 cups chicken broth

1 can unsalted diced tomatoes

1 cup peas

1/2 cup sliced green olives stuffed with pimentos

1/2 cup olive oil

What you do:

1.  Rinse rice until water runs clear.

2.  Heat olive oil on low on stovetop.

3.  Add onion, rice, garlic, and all seasonings.

4.  Simmer about 3 minutes, stirring to ensure all rice is covered in oil.

5.  Stir in tomatoes, chicken broth, peas, and olives.

6.  Transfer to rice cooker and cook ( if you do not have a rice cooker continue to steps 7 & 8).

7.  Transfer to large pot and heat to boiling, stirring so rice doesn’t stick to pan.

8.  Turn heat to low, cover and let simmer until rice is cooked through.

9.  Serve!!

Cheesy broccoli rice

This is totally easy, especially if you own a rice cooker!

What you need:

1 cup long grain white rice

1 can cream of mushroom soup

3 cups frozen broccoli florets

2 cups water

1 tsp. garlic salt

1/2 cup cheese

What you do:

1.  Rinse rice.

2.  Add rice, soup, garlic salt and water to a rice cooker or large pot.

3.  Cover and cook on high.

4.  Add broccoli and cheese when rice has soaked up almost all of the water and let steam until rice has cooked through.

Mexican Rice

OK, this is not 100% authentic, instead my version of Mexican Rice

What you need:

2 cups jasmine rice

3 cups water

2 teaspoons garlic salt

1 teaspoon cumin

1 heaping teaspoon chicken bouillon

1/2 onion diced

1/2 cup tomato sauce

vegetable oil

 

What you do:

1.  Heat about 3 tablespoons vegetable oil in a frying pan on low heat.

2.  Add onions and cook about 1-2 minutes.

3.  Add rice and all seasonings, stir and cook until all rice is coated in oil.

4.  Stir in tomato sauce.

5.  Transfer to a rice cooker or a large covered pot and add water.

6.  Cook and serve!

Cilantro-Lime Rice

This is super easy!

What you need:

2 cups white basmati rice

1 bay leaf

4 cups water

1 tbsp. olive oil

small bunch of fresh cilantro (about 2 tablespoons)

juice of 1.5 limes

1.5 tsp. salt

What you do:

1.  Rinse rice in a strainer under water until water runs clear.

2.  Heat olive oil in a saucepan and stir in rice.

3.  Warm rice in skillet for a couple of minutes, while stirring until all rice is covered in a bit of oil.  This will prevent it from sticking.

4.  Transfer rice to a rice cooker and add 4 cups of water and bay leaf.  Cook.  If you do not have a rice cooker you can do this on the stovetop by putting rice, water and bay leaf in a large pot on the stovetop.  Bring to a rolling boil, reduce heat, cover and simmer about 7 minutes or until cooked through.

5.  When done remove bay leaf.

6.  Transfer rice to a large bowl and stir in salt, cilantro, and lime juice.

Serve!
