Taco Salad

What you need:
1lb. ground beef
2 diced roma tomatoes
1 chopped head of lettuce
1 cup shredded cheddar cheese
3/4 bag crushed Doritos
3/4 cup light mayo
3 tbsp. taco sauce
2 tbsp. taco seasoning

What you do:
1. Brown ground beef, drain and rinse.
2. Mix mayo, taco sauce and seasoning.
3. Layer in large serving bowl: beef, sauce, cheese, tomato, lettuce and Doritos.
4. Mix and serve!

Simple Refried Beans

What you need:
1 large can pinto beans
1 tbsp oil
1 tsp minced garlic
1 tsp cumin
1/2 tsp chili powder
lime juice (I use 1/2 frozen lime juice cube)

What you do:
1. Heat oil on low in skillet and add garlic.
2. Drain beans.
3. Add beans, seasonings and lime juice to skillet.
4. Smash beans and simmer on low stirring every once in a while.
5. Serve!

Mexican Rice III

What you need:
3 tbsp. Vegetable oil
2 cups rice
4 cups water
1/2 yellow onion
2 tbsp. tomato bouillon
2 tsp. minced garlic

What you do:
1. Heat onion in oil for about 2 minutes.
2. Rinse rice till water runs clear.
3. Stir in rice with oil and onion until all rice is covered with oil.
4. Stir in seasonings.
5. Add water and bring to a boil.
6. Reduce heat, cover and simmer about 10 minutes.
7. Serve!

Chicken Fiesta Rice

image What you need:

1 boneless skinless chicken breast

1 cup rice

1 can black beans

1 can diced tomatoes with green chiles

2.5 tsp.chicken bouillon

2.5 cups water

1 tsp. minced garlic

1 tsp. minced onion

1 tbsp. cilantro

1 tsp. garlic powder

1/2 tsp.  cumin

shredded cheese

olive oil

What you do:

1. Add oil to pan and bring to medium heat.

2. Dice chicken and brown in pan with minced garlic and onion: drain.

3. Add 2 tbsp. olive oil to pan and pour in rice, cilantro, garlic powder, chicken bouillon and cumin.

4. Heat at low and stir until all rice is coated in oil.

5. Add tomatoes, black beans and water and bring to boil.

6. Stir continuously until most liquid is gone.

7. Cover and simmer on low for about 20 minutes.

8. Sprinkle with cheese.

9. Serve!

Super Naughty Nachos!

This is super perfect and naughty for movie night in front of the living room TV!

What you need:

1 bag of salted tortilla chips of your choice

1 lb. ground beef

taco seasoning

1 can nacho cheese

1 diced tomato

pickled jalapeños

black olives

sour cream

What you do:

  1. Preheat oven to 350.
  2. Brown ground beef, drain, stir in as much taco seasoning as you would like and add some water- simmer.
  3. Heat cheese in a pan on stovetop until it is pourable.
  4. Bake chips in a casserole dish in the oven for about 10 minutes.
  5. Remove chips from heat and pour all ingredients on top starting with the nacho cheese.
  6. Serve!

Chili

This is my absolute favorite cozy meal!

What you need:
1/2 (if you count calories) or 1 lb. ground beef
2 cans diced tomatoes
1 can kidney beans
1 can tomato soup or DIY can of condensed tomato soup
chili powder

What you do:
1. Brown ground beef and drain.
2. Add all ingredients and simmer about 20 minutes.
3. Serve!

Sopa de Fideo

What you need:
12 cups water
3 cups fideo pasta or broken vermicelli
4 tbsp. chicken bouillon powder
3 cloves of garlic
2 cans diced tomatoes
1/2 onion, diced
1 tbsp cilantro
1 sliced Serrano pepper
Salt to taste

What you do:
1. Blend tomatoes, onion and garlic in blender.
2. Bring water to a boil with bouillon powder and blended tomato mix for a few minutes.
3. Reduce heat and simmer for 45 minutes.
4. Add pasta and sliced Serrano pepper and bring to a boil.
5. Cook about 7 minutes or till pasta is tender.
6. Salt to taste!

Homemade Super Potato Ole!

What you need:
1 lb. Ground Beef
1 can Medium Enchilada Sauce
Taco Seasoning
2 cups Tator Tots
1 cup Mexican Blend Shredded Cheese
1 small can Sliced Black Olives
Dried Cilantro
Tomatoes and Lettuce to garnish
Sour Cream

What you do:
1. Brown ground beef with pinch of Taco Seasoning and drain.
2. Mix Ground Beef with Enchilada Sauce.
3. Spread mixture into baking dish.
4. Cover with Tator Tots, Cheese, and Black Olives.
5. Sprinkle with Cilantro.
6. Bake at 350 for 30 minutes.
7. Garnish with tomatoes, lettuce and sour cream and serve!

Mexican Rice II

What you need:

2 cups long grain rice

4 cups water

1/2 diced yellow onion

2 smashed cloves garlic

3 tbsp. oil

3 tbsp. chicken bouillon

1/4 cup tomato sauce

What you do:

1.  Rinse rice until water runs clear, set aside.

2.  Heat oil in a skillet on low and add onions and garlic.

3.  Simmer on low for about 2 minutes.

4.  Stir in rice and bouillon and make sure all rice is covered with oil, simmer about 2 minutes.

5.  Stir in tomato sauce

6.  Transfer rice to a large pot and stir in 4 cups water.

7.  Bring to a boil for about 7 minutes.

8.  Cover and set heat on low for about 10 minutes or until rice is cooked through.

9.  Serve!!!

Mexican Rice

OK, this is not 100% authentic, instead my version of Mexican Rice

What you need:

2 cups jasmine rice

3 cups water

2 teaspoons garlic salt

1 teaspoon cumin

1 heaping teaspoon chicken bouillon

1/2 onion diced

1/2 cup tomato sauce

vegetable oil

 

What you do:

1.  Heat about 3 tablespoons vegetable oil in a frying pan on low heat.

2.  Add onions and cook about 1-2 minutes.

3.  Add rice and all seasonings, stir and cook until all rice is coated in oil.

4.  Stir in tomato sauce.

5.  Transfer to a rice cooker or a large covered pot and add water.

6.  Cook and serve!
