Stuffed French Toast!


What you need for 7:
14 pieces of bread
Cream cheese
4 eggs
1 tsp. Sugar
1/4 cup milk
21 slices of ham
What you do:
1. Heat margarine in skillet over medium heat.
2. Spread one side of each piece of bread with cream cheese (this is a challenge).
3. Put 3 pieces of ham on cream cheese side of bread and make into sandwiches.
4. Mix eggs, milk, and sugar in a dish.
5. Dip sandwiches into egg mixture and fry till browned.
6. Serve with syrup!


Spinach Tomato Omelette

What you need:
2 eggs
1 tomato
1/2 cup fresh spinach
1 tsp. chicken-tomato bouillon
1 tsp. parsley
1/2 tsp. cilantro
1/4 tsp. crushed red pepper
shredded cheddar cheese

What you do:
1. Slice tomato and spinach and heat in an oiled frying pan on low.
2. Stir eggs with all seasonings and pour over tomatoes and spinach in pan.
3. Cook on low for a few minutes, sprinkle with cheese, and fold.
4. Cover and let cook until eggs are cooked through.

Tasty Low Calorie Breakfast Eggs


I came up with this recipe last summer when I lost a lot of weight!  Mushrooms are a great filler for calorie counters!  Skip the cheese to reduce calories if you want.

What you need:

2 eggs

dash of vegetable oil for cooking

1 cup fresh sliced mushrooms

1 diced tomato 1 tsp. chicken tomato boullion

1/2 tsp dry cilantro

1/4 tsp. dry parsley

dash of pepper

sprinkle of shredded cheese

What to do:

1. Heat mushrooms and tomatoes in a pan with a drizzle of oil.

2. Stir eggs with all seasonings in a bowl.

3. Add egg mixture to pan and cook on low until done.

4. Sprinkle with cheese.


Juevos Rancheros


This recipe serves one, so multiply as needed!

What you need:

1 corn tortilla

1 egg




1/4 serrano pepper or 1/2 tsp crushed red pepper

1 roma tomato

1 small slice onion

vegetable oil for frying

What you do:

1.  Multitask: perform tasks 2-4 simultaneously.

2.  Fry tortilla in oil until lightly browned.

3.  Fry an egg until cooked through.

4.  Blend tomato, a dash of salt and pepper, onion, serrano pepper, and cilantro in a food processor.

5.  Stack tortilla, egg, and then cover with sauce.

6.  Now, if you didn’t do steps 2-4 at the same time, I would recommend heating for a couple of minutes in a microwave before serving!


Breakfast Potatoes


What you need:

2 small potatoe

, olive oil

small bunch of cilantro

dash of pepper

dash of dried parsley

1 tsp. chicken bouillon

What you do:

1. Wash potatoes well but do not peel them.

2. Thinly slice.

3. Cover the bottom of a small frying pan with olive oil and make warm.

4. Add potatoes and chicken bouillon and fry until lightly browned.

5. Add fresh cilantro, pepper, and dried parsley and continue to cook a couple more minutes.

6. Drain from oil and serve!!
